The Black Swan is a unique restaurant, having been awarded a Michelin star and 4 AA Rosettes in just seven years of operation; the restaurant mixes creativity and its true, traditional Yorkshire heritage from its menu to its luxury interior. The restaurant has been serving award-winning food since 2006, influenced by its ‘farm-to-fork’ philosophy and self-reliance to make this restaurant the ultimate family-run success.


The black Swan


The Black Swan offers just one menu, a Tasting Menu. This menu is hand selected to give their guests a purposefully designed eating experience. The Banks family have a long history span across Olstead whereby generation after generation has passed on the family farm. ‘The garden,’ as the Banks family call it, grows bespoke produce, such as black truffle potatoes and wineberries, that cannot be procured anywhere else. The Tasting Menu is inspired by the ingredients grown in their garden, making their menu one of a kind. The garden is a 2-acre kitchen garden with 10 acres of crops amongst their 160-acre family farm and is just next to the restaurant. The Banks family grow the crops necessary for their menu, sticking to their ‘field-to-fork’ philosophy by ensuring the food has an incredibly short journey from field to plate.


The family has always lived and farmed around Oldstead, and food has always been their greatest passion. Tommy Banks headed up The Black Swan with a complete focus of traditional Yorkshire heritage. Awarded his Michelin star at the young age of 24, Tommy became the youngest Michelin-starred chef in Britain in 2013. With Tommy’s farming background, he naturally wanted to grow his own produce. Henceforth, produce from the garden is his main ingredient. Tommy’s talent has achieved great milestones at such young age and he continues to excel in his craftsmanship. He has recently opened Roots York, whereby his morale remains the same, and the garden produce is transported there daily. Tommy’s creativity in the kitchen has influenced his book, ‘Roots’, offering insight into his farming and heritage roots embedded in Oldstead and the cooking habits of one of Yorkshire’s best-renowned chefs.


The famous Tasting Menu is ever-changing with the seasons. At the time of writing, it includes delights such as Aged Raw Beef and Potato with Fermented Celeriac, to Monkfish with Chanterelles and Whey. Tommy and his team create these unique and diverse seasonal menus with their great farm-to-fork philosophy, promising only the best flavours and fresh food.

Accompanied by a Sample Drink list featuring Oldstead Cocktails made to perfection, preserving and enhancing flavours through a tremendous distillery, drying and fermenting process. If wine is more to your taste, the Black Swan has a stunning list of red, white and sparkling wines from around the world.


Tommy and his family serve remarkable food, cocktails and wine in an abundance of luxury, fine dining.

The Black Swan will accommodate a one-night stay with dinner, bed and breakfast, including their Tasting Menu, or operate a Saturday lunch Tasting Menu if you prefer.

Very kind staff and picturesque setting
We stayed at the Fauconberg Arms earlier this week. It’s a lovely old pub in a very picturesque village and area. The staff were so helpful, even picking us up and dropping us off in the snow.
